We are doing a return of the Cariwest Kitchen. Tune in on Sunday Aug. 8th to see your host Sterling Scott learn to make a favorite Caribbean delicacy- Oxtail. This is a classic dish that is eaten throughout the Caribbean, and we are going to share the ingredients list so you can follow along and create your own meal at home.
Our chef is Tamara from Tee’s Cuisine. She is from South Edmonton, and everyone calls her Tee. Her specialty is Trini Cuisine.
“I've always loved food, and I grew up watching my mom, dad, and grandma cooking and it just came to me naturally. I love to feed people! Seeing their happy faces as they eat my food, makes my heart happy and that's one of the reasons I do what I do. Growing up eating Trinidadian food, I soon realized Trinidad has its own unique cuisine and I am very proud to be sharing it.”

Oxtail, Red beans and rice, with coleslaw
Ingredients:
- Oxtail (I prefer the medium pieces)
- Celery
- Onion
- Garlic
- Tomato
- Scotch bonnet pepper
- Trini Spice (Available from Tee’s Cuisine)
- Amchar Masala
- Geera
- Ketchup
- Thyme
- Red beans (if using dry soak overnight)
- Rice
- Cabbage
- Carrots
- Mayo
- Lime
